Banana, nut and maple syrup pancakes

Insanely good, protein rich banana, nut and maple syrup pancakes! Here’s how…

2 eggs, 2 tsp of skimmed milk powder, 110g whatever flour you like (I mix white and wholemeal). Milk to get your desired consistency (approx 200mls). Whisk hard to get a lump free batter. Heat a frying pan, add splash of oil, batter, scatter on raisins and fry on both sides until brown. Top with a banana with a spoonful of yoghurt and some peanut butter, walnuts and a drizzle of maple syrup.
